Easy Flourless Oatmeal Carrot Cake

A healthier dessert option made without flour, perfect for a quick snack or sweet finish to any meal.

Ingredients

  • 2 eggs
  • ½ cup honey
  • 2 carrots, shredded
  • 1 cup oats
  • ½ tsp baking soda
  • 1 tbsp cinnamon
  • ¼ cup butter, room temperature
  • 1 tsp vanilla

Instructions

  1. Preheat your oven to 180C (350F).
  2. Put all ingredients, except the shredded carrot, into a bowl and blend with an immersion blender. If you don’t have an immersion blender, place the ingredients into a blender and blend until smooth.
  3. Stir in the shredded carrot.
  4. Line a small baking pan (7×7 inch) with parchment paper.
  5. Spread the mixture into the pan and bake for 20-30 minutes or until a toothpick inserted in the center comes out clean.
  6. Let the cake cool, then slice and enjoy!

Notes

For extra flavor, you could add a dollop of yogurt or a sprinkle of walnuts. Store in an airtight container at room temperature for a couple of days or in the fridge for up to a week.
